A soft drink that isn’t sweet.

Quas is kvass, a fermented rye and barley drink from Eastern Europe, brewed in Edinburgh. Malty, a bit tangy, with a dry finish. Think dark beer without the alcohol.

Every can is still alive.

We don’t filter or pasteurise Quas, so the sourdough cultures are still working when you open it. That’s why it ships cold and goes straight into the fridge.

Over its six weeks it slowly gets drier and a little more sour. Some people wait for that.

Very refreshing, had the mint and lime flavour and it was lovely. I had never had or even heard of kvass before but will definitely have again.

Absolutely brilliant product. Delicious and tastes like the real deal unlike supermarket kombucha. Delightful personal customer service too.
Marc R.
The best kvass I have tried here in the UK. It tastes exactly how my mum used to make at home.

Anton Puzorjov, founder of Quas

“I stopped drinking in 2014 and got tired of being offered orange juice.”

I grew up in Estonia, where kvass is everywhere. You drink it after the sauna and at your gran’s on holidays. In 2020 I was finishing my PhD in Edinburgh, saw it again on a trip to Tallinn, and couldn’t work out why nobody made it here.

So I started brewing in my student room. A family of rye bakers gave me some of their sourdough starter, and that starter is still in every batch we make in Edinburgh.

Questions

Is it like beer?

A bit. It’s made from the same grains and is naturally fizzy, so it sits fine next to a pint. Because it’s fermented with sourdough, it’s tangier and drier than beer.

Is it alcoholic?

No, Quas is sold as non-alcoholic. As with any fermented drink, the exact declaration is on the can.

Is it like kombucha?

Both are fermented and both have live cultures. Kombucha is made from sweet tea. Quas is made from rye and barley, so it’s maltier, darker and less vinegary.

Why does it need the fridge?

It’s unpasteurised, so the cultures are still active. Cold slows them down. Put the cans in the fridge when they arrive and drink them within six weeks.

How much sugar is in it?

Original has 2.4g per 100ml. Ginger and Mint & Lime have 2.5g. A regular cola has about 10.6g.

Is it vegan? Gluten free?

It’s vegan. It isn’t gluten free, because it’s made from rye and barley.

Can I buy it in a shop?

Yes, some shops and cafés stock it. See stockists.

Something else? Email hello@quasdrinks.co.uk and we’ll get back to you.
